Bowland Beef Meatballs
Delicious homemade meatballs with Forest of Bowland beef
For the meatballs
- 1 Pack Forest of Bowland Beef mince
- 1 Pack Fresh Parsley ((Dried will do))
- 1 Brioche Bun ((Or other breadcrumbs))
- 1 Salt & Ground Black Pepper to taste
For the sauce
- 2 Tins Chopped tomatoes
- 1 Pack Quality plumb tomatoes ((Cherry tomatoes will do))
- 2 Medium Red Onions
- 1 Bulb Garlic ((We like a LOT of garlic))
- 1 Diced Courgette
- 1 Large glass Red wine
- 1 Cube Vegetable stock
- 1 Cube Chicken stock
- Half Cube Beef stock
- 1 Bunch Fresh parsley (Chopped)
- 1 Tbsp Dried Oregano
- 1 Tsp Paprika
- 1 Salt & Black Pepper
The meatballs
Blitz the brioche bun in a blender to make breadcrumbs
Put the beef in a large bowl and add the breadcrumbs
Chop up some of parsley and add to the bowl, and then and salt and black pepper to taste
Mix well with your hands
Griddle the meatballs to brown them well and set aside
The sauce
Dice the red onions and gently cook them in quality virgin olive oil
Add the garlic, we blitz ours with a little water and save two pieces to thinly slice
Add the diced courgette
Add the red wine, tinned tomatoes and plumb tomatoes and cook on a medium heat
Add all of the stock cubes, and oregano (don't put the chopped parsley in yet)
Add the meatballs and leave the sauce to simmer gently
After about 90 minutes add the chopped parsley and check the seasoning
Serve with your pasta of choice, we used linguine
Add some freshly grate parmareggio if you like
